FitzSimons began her art career as an illustrator and graphic designer, creating artwork for newspaper and magazine publications. Before joining the Meredith College faculty, she taught art at Peace College, where she was head of the art department for four years. She currently works primarily in oil pastels, creating large-scale drawings of landscapes often in combination with other media. She exhibits at Tyndall Galleries in Chapel Hill, the Little Art Gallery and Artspace in Raleigh.
